Perfect Carrot Cake

I like Felicity Cloake’s ‘Perfect’ blog for the Guardian very much. There’s much to like, particularly the fact that about half of her recipes are vegetarian, and that she’s done the amount of recipe perfecting that would take me months, maybe years if I were the one doing the hard work. I don’t think you generally have to worry about carrot cake being non-veggie, but my attempt at her recipe was so delicious that I thought it was worth posting about. I didn’t include sultanas in mine, so added a little more carrot, and although I usually go for walnuts in this sort of cake, I took her suggestion of pecans. It was the most moist cake I’ve ever had, and much better than any previous carrot cakes I’ve made. The only change I would make is that you need to add a lot more icing sugar to the frosting to make it the right consistency. It also helps to then chill it for about an hour in the fridge. I need to make this one for my dad now, he luuurves carrot cake.
